Ingredients
- 1 lb fettuccine
- 0.5 cup unsalted butter
- 3 tbsp all-purpose flour
- 5 garlic (minced)
- 1.5 cups heavy cream (room temperature)
- 1 tsp Italian seasoning
- 1 tsp freshly ground black pepper
- 1 tsp salt (plus generously salted water for cooking the pasta)
- 1 tsp garlic powder
- 1 tbsp fresh parsley (finely chopped, plus extra for topping)
- 1.5 cups Parmesan cheese (freshly grated, plus extra for topping)
- 0.5 cup reserved pasta water (as needed; reserve at least this amount before draining)
- olive oil (a drizzle, for tossing with the drained pasta to prevent clumping)
- fresh parsley (extra, for topping)
- Parmesan cheese (extra, for topping)
Steps
- 1
Bring a large pot of generously salted water to a boil.
- 2
Add the fettuccine and cook until al dente according to the package instructions.
- 3
Before draining, reserve at least 1/2 cup of the pasta water.
- 4
Drain the fettuccine and lightly toss it with a drizzle of olive oil to prevent the noodles from clumping.
- 5
Meanwhile, place a large pan over medium-low heat and add the butter. Cook for about 2 minutes, until the foaming subsides.
- 6
Sprinkle in the flour and mix continuously for 1 minute, until the flour is fully combined with the butter.
- 7
Add the minced garlic and cook for about 2 minutes, until fragrant.
- 8
Slowly pour in the room-temperature heavy cream.
- 9
Bring the cream mixture to a gentle simmer and cook for about 3 minutes.
- 10
Reduce the heat and let the sauce thicken slightly for another 2 minutes.
- 11
Add the garlic powder, Italian seasoning, salt, and black pepper. Cook for 1 minute.
- 12
Stir in the chopped fresh parsley.
- 13
Add the grated Parmesan and mix until it is fully melted and the sauce is smooth.
- 14
Add the drained fettuccine directly to the sauce.
- 15
If needed, pour in about 1/2 cup of the reserved pasta water and toss everything together over low heat until the noodles are evenly coated and the sauce clings to them.
- 16
Top with extra Parmesan and fresh parsley, then serve.
Notes
The source does not specify an exact pasta cooking time; follow the package instructions. Add the reserved pasta water only as needed to loosen a sauce that is too thick.
