Ingredients
- 3 lb potatoes (peeled and cubed)
- 2 cup sharp cheddar cheese (shredded)
- 4 tbsp butter (for the sauce)
- 0.5 cup heavy cream
- 1 cup ale (divided; malty variety preferred)
- 2 shallots (minced, for the reduction)
- 1 tbsp mustard (for the reduction)
- 1 tsp vinegar
- 1 tsp Worcestershire sauce
- fresh chives (chopped, for garnish)
- salt and black pepper (to taste)
Steps
- 1
Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- 2
While the potatoes cook, prepare the ale reduction by sautéing the minced shallots in a small saucepan until softened.
- 3
Add a portion of the ale (about 1/2 cup), mustard, vinegar, and Worcestershire sauce to the shallots. Simmer until the liquid has reduced and thickened into a tangy glaze. Set aside.
- 4
In a separate small saucepan, combine the butter, heavy cream, and the remaining ale. Heat gently until the butter is melted and the mixture is warm.
- 5
Drain the cooked potatoes and mash them thoroughly until smooth.
- 6
Slowly mix the buttery ale and cream sauce into the mashed potatoes until well combined and creamy.
- 7
Fold in the shredded sharp cheddar cheese, stirring until the cheese is completely melted into the potatoes. Season with salt and pepper to taste.
- 8
Transfer the cheesy potatoes to a serving bowl. Top with the prepared ale and shallot reduction and garnish with fresh chives.
Notes
The author suggests serving this alongside beef tenderloin. For the best flavor, use a malty ale rather than a hoppy IPA to avoid excessive bitterness.
