Ingredients
- 2 heads Fresh garlic (Halved for roasting)
- 8 tbsp Butter (Very softened)
- Salt (To taste; also use a pinch when roasting the garlic)
- 1 tsp Black pepper
- 1 tbsp Oil (For drizzling over the garlic)
- 1 tsp Red chili flakes (For the garlic butter)
- 2 cloves Fresh garlic (Finely minced)
- 2 tbsp Fresh parsley (Chopped; for the garlic butter)
- 1 loaf Sourdough bread or Italian bread (Sliced in half lengthwise)
- 1 tbsp Fresh parsley (Freshly chopped; for finishing)
- 1 tsp Red chili flakes (For finishing)
- 1 cup Shredded mozzarella cheese
Steps
- 1
Preheat the oven to 400°F (205°C). Place the halved garlic heads on foil, drizzle them with the oil, and add a pinch of salt. Wrap the garlic securely in the foil.
- 2
Bake the wrapped garlic at 400°F for 40–50 minutes, until the cloves are soft. Let the garlic cool, then squeeze the roasted cloves out of their skins.
- 3
Mash the roasted garlic with the very softened butter, finely minced fresh garlic, salt, black pepper, red chili flakes, and chopped parsley until the mixture is smooth.
- 4
Slice the bread loaf in half lengthwise and spread the garlic butter generously over the cut sides.
- 5
Bake the buttered bread at 400°F for 6 minutes, until the butter is melty and the bread is golden.
- 6
Remove the bread from the oven and top it with the shredded mozzarella cheese.
- 7
Return the bread to the oven and bake for another 6 minutes, until the cheese is melted.
- 8
Broil the bread for 1–2 minutes, until the edges are crispy.
- 9
Finish with the freshly chopped parsley and additional red chili flakes. Slice and serve warm.
Notes
The source does not specify a broiler temperature or an exact loaf weight. Watch closely during broiling because the edges can brown quickly.
