Ingredients

  • 1 egg (Room temperature)
  • 80 ml milk (Warm and room temperature before mixing)
  • 1 tsp dry active yeast
  • 2 tbsp sugar
  • 1 tsp salt (For the bread dough)
  • 200 g bread flour
  • 30 g unsalted butter (Melted)
  • 400 g potatoes (Boiled and drained)
  • 1.5 tsp salt (For the potato filling)
  • 40 g milk (For the potato filling)
  • 150 g mozzarella cheese (Shredded)
  • milk (For brushing the bread before baking)

Steps

  1. 1

Bring the egg and 80 ml milk to room temperature. Warm the milk as directed, then whisk the egg and milk together with the dry active yeast and sugar.

  2. 2

Add the bread flour and 1 teaspoon salt. Knead until everything is combined and the dough is smooth.

  3. 3

Add the melted unsalted butter and continue working it into the dough. The dough may be messy at this stage; continue until incorporated.

  4. 4

Cover the dough and let it rest until doubled in size, approximately 1½ hours.

  5. 5

While the dough rises, chop the potatoes, boil them, and drain them. Mash them as for mashed potatoes.

  6. 6

Mix the boiled, drained potatoes with 1½ teaspoons salt and 40 g milk to make the potato filling.

  7. 7

    Shred the mozzarella cheese.

  8. 8

When the dough has doubled, divide it into two pieces and press the gas out of each piece.

  9. 9

Roll each piece into a roughly 12-inch disk.

  10. 10

Place one dough disk on a parchment-lined pan. Spread the potato filling over it and add the shredded mozzarella cheese.

  11. 11

Cover the filling with the second dough disk. Crimp and tuck the edges to seal the bread.

  12. 12

Cover and proof the assembled bread for another 20 minutes.

  13. 13

Brush the top with milk and poke a number of holes in the dough.

  14. 14

Bake at 325°F for 20–30 minutes, until baked through and lightly browned.

  15. 15

Enjoy the cheesy potato bread warm.

Notes

The source does not specify the exact amount of milk used for brushing, the precise boiling time for the potatoes, or the expected final browning level. It describes the potatoes as being prepared like mashed potatoes.
