Ingredients
- 3.75 cup Unsweetened puffed quinoa
- 0.625 cup Smooth almond butter (½ cup plus 2 tablespoons)
- 1.25 cup Vegan 70% dark chocolate (Finely chopped)
- 0.5 tsp Flaky sea salt
Steps
- 1
Line 2 large rimmed baking sheets with parchment paper. Combine the puffed quinoa and almond butter in a large bowl, stirring until the quinoa is coated and the mixture is evenly combined.
- 2
Place the chopped dark chocolate in a medium microwave-safe bowl. Microwave on High in 30-second intervals, stirring thoroughly between each interval, until the chocolate is melted and smooth, about 1 minute 30 seconds to 2 minutes total.
- 3
Pour the melted chocolate over the puffed quinoa mixture. Using a rubber spatula, stir until thoroughly combined. Use a tablespoon measure or small cookie scoop to portion rounded tablespoonfuls onto the prepared baking sheets, gently pressing each portion to flatten. Sprinkle evenly with the flaky sea salt.
- 4
Refrigerate the bites uncovered until firm and set, about 20 minutes.
Notes
The mixture is sticky, so avoid scooping it with your hands. Using one tablespoon to scoop the mixture and another spoon to slide it onto the baking sheet works best. Optional variations mentioned by the source include shredded coconut, dried fruit, or chopped nuts.
