Ingredients

  • 2 Frozen udon (Packets or portions)
  • 150 g Brown mushrooms (Cleaned; thinly slice the caps and stems. The stems may be used.)
  • 200 g Enoki mushrooms (Chop off the ends and tear into smaller strands. If unavailable, use double the quantity of brown mushrooms.)
  • 1 Shallot (Finely diced)
  • 2 Garlic cloves (Finely diced)
  • 1 tbsp Light soy sauce
  • 100 ml Whole milk
  • 80 ml Double cream
  • 1 tbsp White miso (Add after turning off the heat)
  • 1 tsp Dark soy sauce (Optional)
  • Butter (Add as needed; source does not specify an amount)
  • Oil (A little, for heating the pan; amount not specified)
  • Black pepper (To taste)
  • Egg yolks (Optional; use as a topping. Amount not specified.)

Steps

  1. 1

Cover the frozen udon with hot water and leave it until loosened. Drain well and set aside.

  2. 2

Clean the brown and enoki mushrooms. Separate the brown mushroom caps from the stems, then thinly slice both; the stems can also be used.

  3. 3

Chop the ends off the enoki mushrooms and tear the mushrooms into smaller strands. Pat all the mushrooms dry.

  4. 4

Finely dice the shallot and garlic.

  5. 5

Heat a little oil in a pan over high heat.

  6. 6

Add the enoki mushrooms and cook until all their excess moisture has evaporated.

  7. 7

Add the brown mushrooms and cook until their moisture has come out.

  8. 8

Add the butter. Once it has melted, stir in the diced shallot and garlic, then fry for a few minutes.

  9. 9

Reduce the heat to low or medium. Add the light soy sauce, whole milk, and double cream, then stir to combine.

  10. 10

Turn off the heat and add the white miso paste. Stir it into the creamy mushroom mixture.

  11. 11

Add the drained udon, black pepper, and optional dark soy sauce. Combine everything thoroughly.

  12. 12

Top the udon with an optional egg yolk for extra creaminess, then serve.

Notes

The source does not specify amounts for the butter, cooking oil, or black pepper. It also does not specify an amount for the optional egg yolk. The stated 15-minute cooking time includes the quick loosening of the frozen udon.
