Ingredients
- 3 lb Yukon Gold potatoes (About 9–12 potatoes; slice fairly thinly, but not paper thin, so the slices hold their shape. Skins left on for crisp edges.)
- 1 large head Garlic (Cut the top off before roasting.)
- Olive oil (For drizzling over the garlic before roasting.)
- 1 cup Whole milk
- 0.25 cup Heavy cream
- 6 oz Cream cheese
- 0.25 tsp Nutmeg
- 0.25 tsp Smoked paprika
- 0.5 tsp Dried parsley
- 0.5 tsp Onion powder
- 2 cup Gruyère cheese (Grated; 1/4 cup is blended into the cream sauce and the remainder is used for topping.)
- 0.5 cup Parmigiano Reggiano (Grated; blend into the sauce, reserving additional Parmigiano for topping.)
- 1 tsp Butter (For buttering the baking dish.)
- Chives (To taste, for topping.)
- Salt (To taste.)
- Black pepper (To taste; use additional black pepper for topping.)
Steps
- 1
Preheat the oven to 375°F (190°C). Cut the top off the garlic head, drizzle it with olive oil, and wrap it in foil.
- 2
Roast the foil-wrapped garlic at 375°F for 1 hour, until roasted and soft enough to blend into the sauce.
- 3
Blend the milk, heavy cream, roasted garlic, cream cheese, nutmeg, smoked paprika, dried parsley, onion powder, 1/4 cup of the grated Gruyère, and the grated Parmigiano Reggiano until smooth and luscious.
- 4
Slice the potatoes fairly thinly, but not paper thin, so they retain their shape during baking.
- 5
Butter a baking dish with the teaspoon of butter. Layer the sliced potatoes in the dish as shown in the video.
- 6
Drizzle the blended garlic cream evenly over the layered potatoes.
- 7
Top the potatoes with the remaining grated Gruyère cheese.
- 8
Cover the baking dish tightly with foil and bake at 400°F (205°C) on the middle rack for 45 minutes.
- 9
Remove the foil and continue baking uncovered for 15–20 minutes, until the gratin is golden and the cheese is bubbling.
- 10
Top the finished gratin with chives, black pepper, and additional grated Parmigiano Reggiano before serving.
