Ingredients

  • 500 g Pears (Cut into pieces; Williams pears are recommended.)
  • 220 g Dark chocolate (At least 70% cocoa.)
  • Water (A small amount of water to cook the pears.)

Steps

  1. 1

Cut the pears into pieces. Cook them with a small amount of water until just tender, without completely reducing them to a purée.

  2. 2

Drain the cooked pears thoroughly to remove any excess liquid.

  3. 3

Melt the dark chocolate containing at least 70% cocoa.

  4. 4

Place the drained pears and melted chocolate in a blender. Blend for at least 30 seconds, until perfectly smooth.

  5. 5

Pour the mixture into a nice mold; a fluted silicone loaf pan may be used.

  6. 6

Allow the mixture to cool, then place the mold in the refrigerator for at least 4 hours, until the fondant is fully set.

  7. 7

Unmold once chilled and serve as is, or optionally add a decoration, cocoa powder, or a crisp base.

Notes

The fondant keeps in the refrigerator for 2 to 3 days. The decorations, cocoa powder, and crisp base are optional suggestions and are not part of the two basic ingredients.
