Ingredients

  • 2 cup rolled oats (Old-fashioned)
  • 0.5 cup pecans (Chopped)
  • 0.25 cup pumpkin seeds (Pepitas)
  • 0.25 cup unsweetened shredded coconut
  • 0.25 cup chia seeds (Optional)
  • 1 tsp ground cinnamon
  • salt (A pinch)
  • 0.333 cup maple syrup
  • 0.25 cup olive oil
  • 1 tsp vanilla extract

Steps

  1. 1

Place a parchment paper liner in the air fryer basket.

  2. 2

Add the rolled oats, chopped pecans, pumpkin seeds, shredded coconut, chia seeds if using, cinnamon, and salt directly to the lined basket.

  3. 3

Pour the maple syrup, olive oil, and vanilla extract into the basket. Stir until all of the dry ingredients are evenly coated.

  4. 4

Spread the mixture into an even layer in the basket.

  5. 5

Air fry at 300°F (150°C) for 8–10 minutes, stirring once halfway through, until the granola is golden and fragrant.
