Ingredients

  • 2.5 lb Beef (Cut into small pieces. The audio contains an unclear phrase after “2 and a half pounds” (“10 mil de res”), so the cut cannot be identified.)
  • Salt (To taste, for the beef and sauce.)
  • Pepper (To taste, for the beef and sauce.)
  • Garlic powder (To taste.)
  • Onion powder (To taste.)
  • Paprika (To taste.)

  • 1 Avocado (For the sauce.)
  • Cilantro (For the sauce, to taste.)
  • Jalapeño pepper (For the sauce, to taste.)
  • 1 Green tomatillo (For the sauce.)
  • Onion (A small piece, for the sauce.)

  • 1 Lime (Use the juice.)

  • Tomato (For serving inside the gorditas.)
  • Onion (For serving inside the gorditas.)
  • Cream (For serving.)
  • Cheese (For serving; the type and amount are up to you.)

Steps

  1. 1

Cut the beef into small pieces.

  2. 2

Season the beef with salt, pepper, garlic powder, onion powder, paprika, seasoning sauce, parsley or cilantro, and a little sour orange. Mix well and set aside for a moment.

  3. 3

Add the corn flour and warm water to a bowl. Knead well until you have a smooth, workable dough.

  4. 4

Mix the mozzarella cheese with the cream to prepare the filling.

  5. 5

Take a small portion of dough and shape it, making a cavity in the center.

  6. 6

Add some of the cheese mixture to the cavity, according to taste.

  7. 7

Close the dough around the filling, round the gordita, and repeat with the remaining dough and cheese.

  8. 8

Heat enough oil and fry the gorditas until golden brown and crispy. Cook over medium-low heat so they do not remain raw inside; when they are ready, remove them.

  9. 9

Cook the beef in a skillet with a little oil. Alternatively, you can prepare it on a grill or griddle.

  10. 10

To prepare the sauce, place the avocado, cilantro, jalapeño pepper, green tomatillo, a small piece of onion, and the garlic clove in a blender.

  11. 11

Add the lime juice, sour cream, mayonnaise or Greek yogurt, a splash of water, salt, and pepper.

  12. 12

Blend the ingredients until the sauce is smooth.

  13. 13

Cut each gordita in half and fill it with beef to taste, lettuce, tomato, onion, the prepared sauce, cream, and cheese.

  14. 14

Serve the gorditas immediately with all the accompaniments.
