Ingredients

  • 0.5 cup olive oil
  • 1 large onion (diced)
  • 1.5 tbsp ginger-garlic paste
  • cloves (Quantity not specified in the source)
  • black cardamom (Quantity not specified in the source)
  • 2 tsp Kashmiri red chili powder
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder (Optional, for extra spice)
  • 1 kg ground chicken
  • 2 tsp salt
  • 1.5 cup water
  • tomatoes (3–4 tomatoes, chopped)
  • 0.5 tsp garam masala
  • cilantro (For finishing; quantity not specified)
  • green chilies (2–3 green chilies, for finishing)

Steps

  1. 1

Heat the olive oil in a large pan over high heat.

  2. 2

Add the diced onion and cook for 5–6 minutes, stirring frequently, until golden brown.

  3. 3

Add the ginger-garlic paste and cook for about 30 seconds.

  4. 4

Add the cloves, black cardamom, Kashmiri red chili powder, coriander powder, cumin powder, and optional red chili powder. Stir and cook the spices together for 1 minute.

  5. 5

Add the ground chicken and salt. Break the chicken apart and mix it thoroughly with the spices for 1–2 minutes.

  6. 6

Immediately add the water and mix well.

  7. 7

Cover the pan, bring the mixture to a boil, and cook for 7–8 minutes.

  8. 8

Remove the lid, turn the heat to high, and continue cooking until the excess water has dried out.

  9. 9

Add the chopped tomatoes and mix well.

  10. 10

Continue cooking uncovered over high heat, stirring frequently and breaking down the tomatoes as they soften, until the tomatoes are completely cooked down and the oil begins to separate.

  11. 11

Add the garam masala and mix well.

  12. 12

Finish with the cilantro and green chilies. Serve with roti, naan, or rice.
