Bananamisu Chocolate Muffins

Ingredients
- 2 ripe bananas (mashed)
- 0.5 cup oil (neutral vegetable oil)
- 0.5 cup caster sugar (for the muffin batter)
- 2 eggs (large)
- 1 tsp vanilla (for the muffin batter)
- 1.25 cups self-rising flour
- 0.5 tsp baking soda
- 0.5 tsp salt
- 250 g milk chocolate (roughly chopped, divided)
- 6 tsp raw sugar (for sprinkling on top)
- 1 egg yolk (for the filling)
- 2 Tbsp caster sugar (for the filling)
- 0.5 tsp vanilla (for the filling)
- 250 g mascarpone
- salt (pinch, for the filling)
- 60 ml espresso
- 1 Tbsp liqueur (optional, e.g., Kahlua or Amaretto)
- cocoa powder (for dusting)

Preheat your oven to 180°C (350°F). Line a 6-hole Texas (large) muffin tin with paper liners.

In a large mixing bowl, mash the 2 ripe bananas until smooth.

Whisk in the 1/2 cup oil, 1/2 cup caster sugar, 2 eggs, and 1 tsp vanilla until well combined.

Add the 1 1/4 cups self-rising flour, 1/2 tsp baking soda, and 1/2 tsp salt to the wet ingredients and whisk until the batter is smooth.

Fold in 3/4 of the chopped milk chocolate (reserve the rest for the topping).

Divide the batter evenly among the 6 muffin holes. Top each with the remaining chocolate and sprinkle each with 1 tsp of raw sugar.

Bake for 20–25 minutes until the muffins are golden brown and a skewer inserted into the center comes out clean.

While the muffins bake, prepare the filling: In a bowl, whip the egg yolk, 2 Tbsp caster sugar, and 1/2 tsp vanilla until the mixture is pale and thick.

Add the 250g mascarpone and a pinch of salt to the egg mixture; beat until smooth and creamy. Transfer the filling to a piping bag.

In a small bowl, mix the 60ml espresso with the 1 Tbsp liqueur (if using).

While the muffins are still warm, cut a small hole in the center of each muffin.

Pour 2 tsp of the espresso mixture into the center of each muffin.

Pipe the mascarpone filling into the holes, finishing with a small dollop on top of each muffin.

Dust the tops generously with cocoa powder before serving.
Notes
A Texas muffin tin refers to a jumbo-sized muffin pan. If using standard muffin tins, the yield will be approximately 10-12 muffins and baking time should be reduced to 15-18 minutes.
