Ingredients

  • nonstick cooking spray (Avocado oil, ghee oil, or extra-light olive oil spray)
  • 2.5 lb sweet potatoes (Diced into approximately 1-inch pieces; scrub well and leave unpeeled or peel)
  • 3 tbsp avocado oil
  • 1 tbsp all-purpose seasoned salt
  • 1 tsp dried parsley
  • 0.5 tsp freshly ground black pepper (For the sweet potatoes)
  • 0.25 cup Parmesan cheese (Freshly grated)
  • 1.5 lb lean ground beef (Drain and discard rendered fat before adding sauce ingredients)
  • 1.25 cups ketchup
  • 0.25 cup water
  • 2 tbsp sugar
  • 1 tbsp prepared mustard
  • 0.5 tsp white vinegar
  • 0.5 tsp paprika
  • 0.5 tsp kosher salt (For the sloppy Joe sauce)
  • 0.25 tsp freshly ground black pepper (For the sloppy Joe sauce)
  • sliced dill pickles (Optional topping)
  • pickled red onions (Optional topping)
  • sliced raw jalapeños (Optional topping)
  • snipped chives or sliced green onions (Optional topping; use either chives or green onions)

Steps

  1. 1

Place a large, rimmed baking sheet in the oven. Preheat the oven and baking sheet to 400°F (200°C).

  2. 2

In a large bowl, combine the diced sweet potatoes, avocado oil, seasoned salt, dried parsley, black pepper, and Parmesan cheese. Toss thoroughly until the potatoes are evenly coated.

  3. 3

When the oven and baking sheet are hot, use oven mitts to remove the sheet and quickly spray it with nonstick cooking spray.

  4. 4

Immediately spread the seasoned sweet potato mixture in an even layer on the hot baking sheet.

  5. 5

Bake for 20 to 25 minutes, rotating the baking sheet halfway through, until the sweet potatoes are fork-tender and caramelized in spots.

  6. 6

While the sweet potatoes roast, add the lean ground beef and oil to a large pan or shallow pot. Break up the beef with a wooden spatula and cook for about 10 minutes, until no longer pink.

  7. 7

Drain and discard any rendered fat from the beef.

  8. 8

Add the ketchup, water, white vinegar, sugar, prepared mustard, kosher salt, black pepper, and paprika. Stir to combine and heat the sauce through.

  9. 9

While the potatoes and sauce cook, prepare the toppings by slicing the pickles and raw jalapeños and snipping the chives or slicing the green onions. Have the pickled red onions ready.

  10. 10

Divide the roasted sweet potatoes and sloppy Joe mixture among bowls. Top with the desired pickles, pickled red onions, jalapeños, chives, or green onions.

Notes

The source mentions optional variations including chopped lettuce, roasted broccoli, diced avocado, hot sauce, or cheese. Frozen sweet potato fries may also be used as a shortcut. The stated yield is 5 servings, though the description notes it may serve 5 to 6 depending on portion size.
