Ingredients

  • 2 sweet potatoes (large, peeled; roast in halves or cut into smaller pieces)
  • 2 red bell peppers (seeds removed before or after roasting)
  • 4 carrots (peeled)
  • 2 red onions (quartered)
  • 1.5 heads garlic (tops cut off; roast cut-side up)
  • 3.5 tbsp olive oil (3–4 tbsp)
  • 0.5 tsp cinnamon
  • 0.5 tsp paprika
  • 0.5 tsp dried thyme
  • salt (to taste)
  • black pepper (to taste)
  • 3.5 cups vegetable broth (about 3–4 cups, or as needed; add more to reach desired consistency)
  • coconut milk (for topping, optional; amount not specified)
  • fresh herbs (for topping, optional; amount and type not specified)
  • chilli oil (for topping, optional; amount not specified)
  • sourdough bread (to serve; amount not specified)

Steps

  1. 1

Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. 2

Prepare the vegetables: peel the sweet potatoes and carrots; cut the sweet potatoes in halves or into smaller pieces so they roast faster. Remove the seeds from the bell peppers before roasting if desired, and quarter the onions. Cut the tops off the garlic heads.

  3. 3

Arrange the prepared vegetables on the lined baking tray, placing the garlic heads cut-side up.

  4. 4

Drizzle the vegetables generously with olive oil. Season with cinnamon, paprika, dried thyme, salt, and pepper, and rub the oil and seasonings over the vegetables.

  5. 5

Roast for 35–40 minutes, until the sweet potatoes are fork-tender and the vegetables are roasted. Watch carefully to avoid burning.

  6. 6

Transfer the roasted vegetables to a blender. Squeeze the roasted garlic cloves out of their skins into the blender.

  7. 7

Add about 3–4 cups of vegetable broth and blend until smooth. Add more broth as needed to reach your desired consistency.

  8. 8

Serve topped with coconut milk, fresh herbs, and a drizzle of chilli oil, if desired. Enjoy with sourdough bread.

Notes

The post does not specify quantities for the optional toppings or sourdough bread. Broth quantity is approximate and can be adjusted to the desired consistency.
