Ingredients

  • 4 lb oxtail
  • 2 tsp Jamaican all-purpose seasoning
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 1 tsp ground allspice
  • 1 tsp black pepper
  • 1.5 tsp salt (for the oxtail)
  • 1 tbsp browning sauce (plus a little for the gravy)
  • 2 tbsp neutral oil
  • 1 yellow onion (large, sliced)
  • 2 carrots (sliced)
  • 4 garlic (cloves, minced)
  • 4.5 sprigs fresh thyme
  • 1 Scotch bonnet pepper
  • 2 cup low-sodium beef broth
  • green onions (for garnish)
  • 2 cup Calrose rice (rinsed)
  • 1.5 cup water
  • 1 cup coconut milk
  • 0.5 tsp salt (for the rice)

Steps

  1. 1

Season the oxtail with Jamaican all-purpose seasoning, garlic powder, onion powder, paprika, ground allspice, black pepper, salt, and 1 tablespoon browning sauce, coating the pieces evenly.

  2. 2

Heat the neutral oil in a pot over medium-high heat. Sear the seasoned oxtail until nicely browned on all sides, working in batches if needed. Remove the oxtail from the pot.

  3. 3

Add the sliced onion, carrots, and minced garlic to the pot. Sauté until softened and fragrant.

  4. 4

Return the oxtail to the pot. Add the thyme, Scotch bonnet pepper, and beef broth.

  5. 5

Cover the pot and simmer over low heat for 2½–3½ hours, until the oxtail is tender.

  6. 6

Remove the oxtail from the pot and strain the vegetables from the braising liquid.

  7. 7

Use the remaining braising liquid with a little additional browning sauce to build the gravy. Reduce until rich and thick.

  8. 8

Return the oxtail to the gravy and coat it well.

  9. 9

Rinse the Calrose rice. Put it in a rice cooker with the water, coconut milk, and ½ teaspoon salt.

  10. 10

Cook the rice in the rice cooker, then fluff it.

  11. 11

Serve the coconut rice with the oxtail and gravy; garnish with green onions.

Notes

The directions call for a little additional browning sauce in the gravy, but do not specify its amount. No separate rice-cooker cooking time is given.
