Ingredients

  • 1.25 oz instant coffee (for the coffee foam)
  • 4.25 oz sugar (for the coffee foam)
  • 4.75 fl oz cold water
  • 2 cup heavy cream (chilled)
  • 7 oz condensed milk (sweetened)
  • 0.5 cup milk (for soaking)
  • 1 tsp instant coffee (for soaking liquid)
  • 1 tsp sugar (for soaking liquid)
  • 12 ladyfingers (approximate count for 6 servings)
  • cocoa powder (to taste for dusting)

Steps

    In a large bowl, combine 1 1/4 ounces of instant coffee, 4 1/4 ounces of sugar, and 4 3/4 fluid ounces of cold water.

    Mix the coffee, sugar, and water until the solids are fully dissolved.

    Beat the mixture with an electric mixer until it becomes light, foamy, and takes on a thick, creamy texture.

    In a separate bowl, beat 2 cups of heavy cream until stiff peaks form and it holds its shape.

    Add 7 ounces of condensed milk to the whipped cream and mix until smooth.

    Gently fold the coffee foam into the whipped cream mixture until combined.

    In a small bowl, prepare the soaking liquid by mixing 1/2 cup of milk, 1 teaspoon of instant coffee, and 1 teaspoon of sugar.

    Dip a ladyfinger into the coffee-milk mixture and place it into the bottom of a dessert cup, breaking it into pieces if necessary to fit.

    Transfer the mousse to a piping bag and pipe a generous layer on top of the ladyfinger.

Notes

This recipe uses a technique similar to Dalgona coffee to create the foam. Ensure the heavy cream is very cold before whipping for the best stability.
