Ingredients
- 2 cup all-purpose flour
- 1 tbsp cornstarch
- 0.333 tsp salt
- 0.5 tsp baking soda
- 2 tsp vanilla bean paste or vanilla extract (Use either vanilla bean paste or vanilla extract.)
- 0.25 cup light brown sugar
- 0.75 cup granulated sugar (For the dough.)
- 1 egg and egg yolk (Use 1 whole egg plus 1 egg yolk, at room temperature.)
- 0.25 cup sprinkles
- 0.75 cup unsalted butter (Melted.)
- 4 tbsp granulated sugar (For rolling the cookies.)
Steps
- 1
Melt the unsalted butter. In a bowl, combine the melted butter, the 3/4 cup granulated sugar, and the light brown sugar. Mix for 1–2 minutes until well combined.
- 2
Crack the whole egg into the butter-and-sugar mixture and add the egg yolk. Whisk for 2–3 minutes, until a smooth paste forms.

Add the vanilla bean paste or vanilla extract and mix until combined.
- 4
In a separate bowl, combine the all-purpose flour, cornstarch, baking soda, and salt.
- 5
Gradually add the dry ingredients to the wet batter, mixing until just combined. Do not overmix.
- 6
Add the sprinkles and mix just until they are evenly distributed throughout the dough.
- 7
Scoop the dough into 12 cookies onto a piece of parchment paper. Roll each cookie in the 4 tablespoons of granulated sugar.
- 8
Freeze the sugared cookie dough portions for 30 minutes.
- 9
Preheat the oven to 350°F (175°C).
- 10
Place 4 cookies on each baking sheet, spacing them evenly apart.
- 11
Bake for 13–14 minutes.
- 12
Let the cookies cool completely before serving.
