Homemade Sugar-Free Chocolate Ice Cream
A creamy, chocolatey homemade ice cream sweetened with Splenda instead of granulated sugar. It can be frozen overnight without an ice cream maker or partially frozen and finished in an ice cream maker.

Ingredients
- 2 tbsp Unsweetened cocoa powder

- 1.75 cups Evaporated milk (See the source post for details.)
- 1 tsp Vanilla extract

In a small mixing bowl, whisk together the Splenda and unsweetened cocoa powder until evenly combined and no obvious cocoa clumps remain. Set the mixture aside.

In a large mixing bowl, blend the evaporated milk and heavy whipping cream until they are thoroughly combined.

Add the cocoa-and-sweetener mixture and the vanilla extract to the large bowl containing the blended milk and cream.

Using a mixer, begin on low speed for 15 seconds to incorporate the cocoa mixture without splashing. Increase the speed to high and whip for approximately 4–5 minutes, until the mixture forms a peak.

Remove the bowl from the mixer and give the mixture a quick, gentle stir to ensure it is evenly blended.

Transfer the ice cream mixture to a freezer-safe ice-cream container.

Freeze the container overnight, or for approximately 8 hours, before serving.

Alternatively, freeze the mixture for about 30 minutes, then transfer it to an ice cream maker and process according to the manufacturer's directions.
Notes
For a lower-fat alternative, the source suggests substituting a 50/50 mixture of Greek yogurt and milk for the heavy whipping cream, though the finished ice cream may be less rich. Half-and-half can also be used as an alternative to evaporated milk. Optional variations include 1–2 teaspoons of another extract, such as banana or mint; Dutch-process cocoa for a richer chocolate flavor; or chopped nuts, sugar-free chocolate chips, or chopped sugar-free candy stirred in after the ice cream has begun to set.
