Ingredients

  • 1.5 lb Chicken and vegetable wontons or dumplings (Bibigo Korean-style mini chicken and vegetable dumplings)
  • Shredded carrots
  • Sliced mushrooms
  • Green onion (Snipped or chopped)
  • 1 tbsp Soy sauce (Less-sodium soy sauce)
  • 1 tbsp Sesame oil
  • 6 cup Low-sodium chicken broth (Beef or vegetable broth may be used instead)
  • 2 bag Chicken-flavor ramen noodles (Use the noodles only; remove and discard the flavor packets. Each bag is labeled 3 oz.)
  • 2 cup Water (Added to help moisten and cook the noodles)
  • Garlic (A little garlic; minced garlic may be used)
  • Ginger (Use fresh ginger or powdered ginger)
  • Fresh cilantro leaves (Snipped over the soup before serving)

Steps

  1. 1

Place the chicken-and-vegetable wontons, shredded carrots, sliced mushrooms, and green onion in a skillet or large pot.

  2. 2

Add 1 tablespoon of soy sauce and 1 tablespoon of sesame oil.

  3. 3

Pour in 6 cups of low-sodium chicken broth. Beef or vegetable broth may be used instead.

  4. 4

Open two bags of chicken-flavor ramen, remove the flavor packets, and add only the noodles to the pot.

  5. 5

Add 2 cups of water to help moisten and cook the noodles.

  6. 6

Add a little garlic and ginger. Use minced garlic if desired, and use fresh ginger or powdered ginger according to what is available.

  7. 7

Stir the soup and ensure the noodles are submerged in the broth.

  8. 8

Cover the pot with a lid and simmer for about 30 minutes, until the noodles have softened and the soup is simmering.

  9. 9

Before serving, snip fresh cilantro leaves over the soup.

  10. 10

Serve the soup hot, with the dumplings and noodles together in the flavorful broth.
