Ingredients

  • 2 tbsp olive oil (For searing the chicken)
  • 1.5 lb chicken breast (Pat dry before seasoning)
  • 12 oz mafaldine pasta
  • 4 tbsp butter
  • 2 tsp dried shallots (Or use minced fresh shallots)
  • 2 tsp Italian seasoning
  • 2 tbsp all-purpose flour (Stir into the butter and aromatics to form a paste)
  • 0.5 cup chicken broth
  • 3 cup heavy cream
  • 12 oz shredded Parmesan cheese (Stir in until fully melted)
  • 0.25 cup reserved pasta water (Add gradually as needed to help the sauce coat the pasta)
  • salt and garlic powder (To taste; used to season the chicken and flavor the sauce)
  • paprika (Part of the seasoning blend used on the chicken; amount to taste)
  • dried oregano (Part of the seasoning blend used on the chicken; amount to taste)
  • dried thyme (Part of the seasoning blend used on the chicken; amount to taste)
  • black pepper (Part of the seasoning blend used on the chicken; amount to taste)
  • 1 bulb roasted garlic (Optional; mash into the sauce for extra flavor)

Steps

  1. 1

Bring water to a boil and cook the mafaldine pasta until al dente. Drain, reserving ¼ cup pasta water, and set the pasta aside.

  2. 2

Pat the chicken breasts dry. Season generously with paprika, oregano, thyme, garlic powder, salt, and black pepper.

  3. 3

Heat the olive oil in a skillet over medium heat. Add the seasoned chicken and sear for about 5 minutes per side, until golden.

  4. 4

Lower the heat, cover the skillet, and continue cooking the chicken for 10–12 minutes, until it reaches an internal temperature of 165°F.

  5. 5

Remove the chicken from the skillet and let it rest.

  6. 6

In the same skillet, melt the butter over lowered heat.

  7. 7

Add the dried shallots, garlic powder, and Italian seasoning to the melted butter. Stir for about 1 minute to release their flavor.

  8. 8

Add the flour and stir until it forms a paste, scraping up the browned bits from the bottom of the skillet.

  9. 9

Slowly whisk in the chicken broth and heavy cream until the sauce is smooth and creamy.

  10. 10

Add the shredded Parmesan and stir until it is fully melted and the sauce is silky.

  11. 11

If using roasted garlic, mash the roasted garlic bulb and whisk it into the sauce.

  12. 12

Add the cooked pasta to the sauce. Toss to coat, adding the reserved pasta water a little at a time until the sauce coats the pasta evenly.

  13. 13

Slice the rested chicken and return it to the skillet. Stir to combine with the pasta and sauce, then serve hot.

Notes

The source describes this as a one-pan dinner, although the pasta is boiled separately before being added to the skillet. The exact amounts of the chicken seasoning blend and garlic powder are not specified. Roasted garlic is optional.
