Ingredients

  • 1.5 lb boneless, skinless chicken thighs (Cubed)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp gochugaru (Optional)
  • 0.5 cup cornstarch (Plus more as needed for extra crunch)
  • 2 tbsp avocado oil
  • neutral oil (For pan-frying; use a generous layer)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tsp sesame oil
  • 1.5 tbsp Chili Crunch Sauce (@momofukugoods; source gives a range of 1–2 tablespoons)
  • 5 garlic (Cloves, minced)
  • 3 tbsp butter
  • jasmine rice (For serving)
  • Chili Crunch (For serving; @momofukugoods)
  • green onions (Sliced, for serving)
  • sesame seeds (For serving)

Steps

  1. 1

Place the cubed chicken thighs in a bowl. Add the garlic powder, onion powder, salt, black pepper, and optional gochugaru.

  2. 2

Add the avocado oil and 1/2 cup cornstarch to the chicken. Toss until every piece is evenly coated. For extra crunch, lightly toss each piece in a little additional cornstarch.

  3. 3

In a small bowl or jar, combine the soy sauce, rice vinegar, honey, sesame oil, Chili Crunch Sauce, and minced garlic. Mix until combined.

  4. 4

Heat a generous layer of neutral oil in a pan over medium-high heat.

  5. 5

Once the oil is hot, add the chicken in a single layer. Cook for about 4 minutes before flipping.

  6. 6

Continue cooking the chicken until golden, crispy, and cooked through, about 10–12 minutes total. Remove the chicken from the pan.

  7. 7

Reduce the heat to low and let the pan cool for about 2 minutes.

  8. 8

Mix the glaze again, then add it to the pan. Cook for 1 minute.

  9. 9

Add the butter and stir for another 3–4 minutes, until the glaze is glossy, bubbling, and thickened.

  10. 10

Turn off the heat, return the chicken to the pan, and toss until coated in the glaze.

  11. 11

Serve the glazed chicken over jasmine rice with Chili Crunch, sliced green onions, and sesame seeds.

Notes

The source does not specify the amount of jasmine rice, serving Chili Crunch, green onions, or sesame seeds. It also does not specify the exact amount of neutral oil beyond using a generous layer for pan-frying. Chicken should be cooked through before serving.
