Ingredients
- 360 g large ripe bananas (Finely mashed; use ripe bananas)
- 1.333 cup all-purpose flour
- 0.333 cup natural cocoa powder
- 8 tbsp salted butter (Melted)
- 1 large egg (Room temperature)
- 0.333 cup sour cream or Greek yogurt (Room temperature)
- 0.5 cup light brown sugar
- 0.5 cup granulated sugar
- 1 tbsp vanilla bean paste
- 1 cup semisweet chocolate chips (Plus more for topping)
- 1 tsp baking soda
Steps
- 1
Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper.
- 2
In a mixing bowl, peel and finely mash the bananas until smooth and not lumpy.
- 3
Add the melted salted butter, light brown sugar, and granulated sugar to the mashed bananas. Mix well for 2 minutes.
- 4
Crack in the room-temperature egg and whisk for an additional 2–3 minutes.
- 5
Add the sour cream or Greek yogurt and the vanilla bean paste. Mix well, then set the wet mixture aside.
- 6
In a separate bowl, combine the all-purpose flour, baking soda, and cocoa powder. Mix until evenly combined.
- 7
Slowly add the dry mixture to the wet batter, mixing as you go. Add the semisweet chocolate chips and fold just until combined. Do not overmix the batter at this point.
- 8
Pour the batter into the parchment-lined loaf pan. Add extra chocolate chips on top if desired.
- 9
Bake for 1 hour, or until a toothpick inserted into the bread comes out clean.
- 10
Let the banana bread cool completely before serving.
Notes
