Ingredients
- potatoes (Boiled, peeled, and mashed)
- drumsticks (Boiled; use the pulp and remove the seeds. Refers to drumstick/moringa pods.)
- carrot (Finely grated)
- fresh cilantro (Fresh coriander leaves)
- coriander powder (Optional basic seasoning)
- cumin powder (Optional basic seasoning)
- wheat flour (Used to bind the mixture)
- ghee (Used to grease hands and the pan)
- yogurt (For serving with the paratha)
Steps
- 1
Boil the potatoes and drumsticks in a pressure cooker.
- 2
Finely grate the carrot.
- 3
When the potatoes are boiled, peel away their skins. Remove the pulp from the drumsticks and discard all the seeds; the seeds are not used.
- 4
Mash the boiled potatoes and drumstick pulp together thoroughly with a fork.
- 5
Add the fresh cilantro and finely grated carrot to the mashed mixture.
- 6
Add the optional coriander powder and cumin powder, followed by enough wheat flour to bind the mixture.
- 7
Mix everything well. Lightly grease your hands with ghee and form the mixture into a dough-like mixture. Do not add water.
- 8
Take small portions of the dough and shape them into small balls. Place each ball on a baking sheet and flatten or shape it into a small roti.
- 9
Lightly heat a pan and apply a little ghee to it.
- 10
Cook the roti on both sides until cooked through. The finished paratha should be very soft.
- 11
To serve, tear the soft paratha into very small bites. Mash the bites easily with your fingers if needed, and feed them with yogurt.
Notes
The source does not provide ingredient quantities, cooking times, or a specific heat level. It advises using less potato and vegetables relative to the flour so the paratha binds properly, ensuring the pan is hot enough, and applying ghee to the pan to help prevent sticking. Intended for babies 8 months and older; serve in small, soft, mashable bites.
