- 8 oz sharp cheddar cheese (shredded)
- 8 oz Colby Jack cheese (shredded)
- 8 oz mozzarella cheese (shredded)
- 6 oz Gruyère cheese (shredded)
- 4 oz pepper jack cheese (shredded)
- 16 oz Cavatappi pasta (dry)
- 3 tbsp salted butter (plus extra for greasing skillet)
- 3 tbsp all purpose flour
- 2 cup evaporated milk
- 2 cup heavy cream
- 8 oz cream cheese (softened)
- 1 tsp salt (or to taste)
- 1 tsp black pepper
- 1 tsp paprika
- 0.5 tsp ground mustard

Preheat your oven to 400°F (200°C).

Shred the sharp cheddar, Colby Jack, mozzarella, Gruyère, and pepper jack cheeses. Combine them into one large bowl to create your cheese blend and set aside.

Bring a large pot of salted water to a boil.

Add the cavatappi pasta to the boiling water and cook for 6 minutes, which should be just under al dente. Drain in a colander, then return the pasta to the pot.

In an enamel cast iron skillet over medium heat, melt 3 tablespoons of salted butter.

Sprinkle in the flour and whisk continuously for 1 to 2 minutes to create a roux.
