Ingredients

  • 200 ml lukewarm milk
  • 0.5 packet dry yeast
  • 2 tsp sugar (2 teaspoons in the Turkish source)
  • 1 egg
  • 1 tsp salt
  • 3 cup flour (For kneading the dough; additional flour is used as needed to lightly coat the bottoms of the dough balls.)
  • 2 tbsp butter, at room temperature (Heaping tablespoons)
  • vegetable oil (For frying; add enough to the pan to reach approximately 3 finger-widths in depth.)
  • chocolate hazelnut spread (Any preferred brand; for filling)
  • powdered sugar (For coating, as needed)

Steps

  1. 1

Place the lukewarm milk, dry yeast, and sugar in a bowl and mix.

  2. 2

Add the egg and salt, and mix.

  3. 3

Add the flour and knead the dough. The dough may be firm at first; this is normal because the butter has not yet been added.

  4. 4

Add the room-temperature butter and continue kneading until it is fully incorporated and the dough becomes smooth.

  5. 5

Shape the dough into a smooth, round ball. Cover it and leave it to rise for approximately 40-45 minutes, until doubled in volume.

  6. 6

Divide the risen dough into 10 equal pieces. Shape each piece into a smooth, taut ball.

  7. 7

Prepare a square of parchment paper for each dough ball and place the balls on the paper. Lightly coat the bottoms with flour.

  8. 8

Lightly press down on each dough ball with a glass to flatten it. Let the dough pieces rise for another 25 minutes.

  9. 9

Add vegetable oil to a pan to a depth of approximately 3 finger-widths and heat over medium heat. Once the oil is hot, reduce the heat to medium-low.

  10. 10

Carefully place the risen dough pieces in the oil. Fry each side for 2-3 minutes; do not turn them constantly, as this may cause the dough to absorb too much oil.

  11. 11

Once one side is golden brown, turn the dough over and fry the other side. Cook all the dough pieces in the same way.

  12. 12

Coat the fried Berliners with powdered sugar.

  13. 13

Make a hole in the side of each one with a straw. Fill a piping bag with the chocolate hazelnut spread and pipe it into the doughnuts through the holes.

Notes

The source does not specify the exact amount or temperature of the frying oil; it recommends using oil approximately 3 finger-widths deep and frying over medium-low heat.
