Ingredients
- 1.5 lb chicken thighs (boneless, skinless, cut into bite-sized pieces)
- 2 tbsp cajun seasoning (divided)
- 2 tbsp olive oil
- 1 onion (diced)
- 1 bell pepper (diced)
- 3 cloves garlic (minced)
- 1.5 cup long grain white rice (rinsed)
- 3 cup chicken broth
- salt and pepper (to taste)

Season the chicken pieces with 1 tablespoon of Cajun seasoning, salt, and pepper.

Heat olive oil in a large skillet or pan over medium-high heat.

Add the chicken to the pan and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pan and set aside.

In the same pan, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the rinsed rice and the remaining 1 tablespoon of Cajun seasoning, toasting the rice for about 2 minutes.

Pour in the chicken broth and bring the mixture to a boil.

Return the chicken to the pan, reduce heat to low, cover with a lid, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.

Remove from heat and let it sit covered for 5 minutes before fluffing with a fork and serving.
Notes
For extra heat, add a pinch of cayenne pepper or sliced jalapeños. Ensure the rice is rinsed well to prevent it from becoming too gummy in the one-pan format.
