Ingredients

  • 1 lb Protein of choice (Use shrimp, chicken, or beef; alternatively use 1 block of tofu cut into thin strips and fried for firmness.)
  • 8 bundles Bok choy or Chinese broccoli (About 1 bag; prepare the vegetables before cooking. Chinese broccoli cooks more quickly than bok choy.)
  • 4 servings Udon noodles (Precooked; the source does not specify a package weight.)
  • Mushrooms (1 pack; use king oyster, white button, or baby bella mushrooms.)
  • 1 Scallion (Stalk, chopped, for topping.)
  • 2 tbsp Dark soy sauce
  • 2 tbsp Regular soy sauce (Spelled “soy sauuce” in the source.)
  • 4 tbsp Oyster sauce
  • 2 tbsp Mirin
  • 1 tbsp Sugar
  • 1 tsp Rice wine vinegar
  • 1 tbsp Garlic (Minced.)
  • 1 tbsp Cooking oil (Oil of choice, for cooking the protein and stir-frying.)
  • Sriracha (For topping, to taste.)

Steps

  1. 1

Prepare the bok choy or Chinese broccoli, mushrooms, scallion, and chosen protein. Mix the dark soy sauce, regular soy sauce, oyster sauce, mirin, sugar, rice wine vinegar, and minced garlic in a bowl, then set the sauce aside.

  2. 2

Bring a pot of water to a boil. Pour the boiling water over the precooked udon noodles in a large bowl and stir gently until the noodles separate. The noodles do not need to be cooked.

  3. 3

Drain the separated udon noodles and rinse them with cold water. Use them right away, or add a drop of oil to keep them separated.

  4. 4

Add the tablespoon of cooking oil to a pan and heat it over medium heat.

  5. 5

Add the chosen protein to the pan and cook it fully. Remove the cooked protein from the pan and set it aside.

  6. 6

Add the bok choy or Chinese broccoli and the mushrooms to the pan. Sauté until the vegetables are almost cooked; Chinese broccoli takes less time to cook than bok choy.

  7. 7

Add the separated udon noodles to the pan with the vegetables.

  8. 8

Pour the prepared sauce over the noodles and vegetables, then return the cooked protein to the pan.

  9. 9

Combine everything in the pan for 2 minutes, then turn off the heat.

  10. 10

Top the stir-fry with the chopped scallion and Sriracha, then serve and enjoy.

Notes

The source mentions that steamed bok choy can be frozen, but it does not provide freezing or thawing instructions. The pack sizes for the vegetables and mushrooms are not specified.
