Ingredients

  • 3 small cucumbers (roughly chopped)
  • 1 cup fresh pineapple chunks
  • 10 fresh mint leaves
  • 1 knob fresh ginger (small knob, peeled)
  • 0.5 cup water
  • 1 lime juice (juice of 1 small lime)
  • 1 tsp honey
  • 1 tbsp warm water (to dissolve honey)
  • ice (for serving)
  • fresh mint, pineapple, and/or cucumber slices (for garnish)

Steps

    Add the roughly chopped cucumbers, pineapple chunks, mint leaves, peeled ginger knob, and 1/2 cup of water to a blender.

    Blend the ingredients until the mixture is completely smooth.

    Pour the blended mixture through a fine-mesh strainer into a pitcher or bowl, pressing down on the solids to extract as much liquid as possible.

    In a separate small bowl, whisk 1 teaspoon of honey with 1 tablespoon of warm water until the honey is fully dissolved.

    Stir the dissolved honey mixture and the fresh lime juice into the strained cucumber-pineapple juice.

    Taste the limeade and adjust the sweetness or acidity with a little more honey or lime juice if desired.

    Serve the limeade over ice and garnish with fresh mint, pineapple, and/or cucumber slices.

Notes

For a more intense ginger flavor, you can grate the ginger before adding it to the blender. If you prefer a sweeter drink, you can increase the honey to 1 tablespoon.
