Ingredients

  • 150 g Firm tofu
  • 160 g Cabbage
  • 0.333 tsp Salt (For the cabbage; the video shows ⅓ teaspoon.)
  • 80 g Chives or spring onion (The video labels this ingredient “Spring onion / Chives.”)
  • 1 tsp Garlic paste
  • 0.5 tsp Ginger paste
  • 1 tsp Sesame seeds
  • 0.25 tsp Salt (For the filling.)
  • 0.5 tsp Sugar (For the filling; the displayed fraction is slightly unclear.)
  • 0.25 tsp White pepper (The displayed quantity is slightly unclear; interpreted as ¼ teaspoon.)
  • 1 tsp Sesame oil
  • 2 tbsp Chickpea starch
  • Warm water (Luke-warm; amount not shown. Used to soften the rice papers.)
  • Rice paper wrappers (Amount not shown.)
  • Oil (For frying; type and amount not shown.)
  • 0.5 tbsp Sugar (For dipping sauce.)
  • 1 tbsp Soy sauce (For dipping sauce.)
  • 1 tsp Balsamic vinegar (For dipping sauce.)

Steps

  1. 1

Combine the firm tofu, cabbage, and ⅓ teaspoon salt. Mix well and leave to rest for 15 minutes.

  2. 2

Squeeze excess water from the cabbage mixture.

  3. 3

Add the chives or spring onion, garlic paste, ginger paste, sesame seeds, ¼ teaspoon salt, sugar, white pepper, sesame oil, and chickpea starch to the tofu and cabbage. Mix the filling together.

  4. 4

Prepare a dish of lukewarm water. Dip a rice-paper wrapper to soften it, then lay it with the smooth side facing down.

  5. 5

Wrap the tofu and vegetable filling in the softened rice paper to form dumplings.

  6. 6

Heat oil in a pan over medium heat. Arrange the dumplings with a little space between each one so they do not stick together.

  7. 7

Fry for 3–4 minutes on both sides, turning them repeatedly, until the rice-paper surfaces are bubbling and crisp.

  8. 8

Mix the ½ tablespoon sugar, soy sauce, and balsamic vinegar together to make the dipping sauce. Serve with the crispy dumplings.

Notes

The video does not state the amount of rice paper, warm water, or frying oil, and does not give a dumpling yield. The dipping sauce quantities are shown near the end; its mixing method is not explicitly described.
