Ingredients

  • 3 Russet potatoes (Peeled and cut into small pieces)
  • Salt and pepper (To taste; salt is also used in the boiling water)
  • 0.5 cup Mozzarella cheese (Cut into small cubes or shredded)
  • 2 tbsp Cornstarch
  • 1 tbsp Fresh coriander (Minced)
  • 1 tbsp Garlic powder
  • Oil (For frying)
  • 1 cup Corn flakes (Crushed)
  • 1 Egg (Beaten)
  • 1 cup Parmesan cheese (Freshly grated; the source also mentions freshly grated Parmesan as a garnish)
  • Parsley (Chopped, for garnish)
  • Dipping sauce (For serving; use your favorite dipping sauce)

Steps

  1. 1

Peel the russet potatoes and cut them into small pieces.

  2. 2

Boil the potato pieces in salted water until fully cooked.

  3. 3

    Mash the cooked potatoes.

  4. 4

Mix the mashed potatoes with salt, pepper, cornstarch, minced coriander, and garlic powder.

  5. 5

Shape small balls from the potato mixture, stuffing mozzarella into the center of each ball. Make sure the potato mixture completely encloses the cheese and that there are no cracks in the balls.

  6. 6

Beat the egg in a bowl and set it aside.

  7. 7

Place the crushed corn flakes in a separate bowl.

  8. 8

Coat each potato ball in the beaten egg, then coat it with the crushed corn flakes.

  9. 9

Heat oil in a pan over medium heat. Once the oil is hot, add the potato balls, working in batches of 5–6 balls so the pan is not overcrowded.

  10. 10

Fry the potato balls for 2–3 minutes, or until golden and crispy.

  11. 11

Garnish with chopped parsley and freshly grated Parmesan cheese. Serve with your favorite dipping sauce.

Notes

The source lists Parmesan cheese as an ingredient and later appears to contain a typo, saying “freshly grated parsley cheese”; this has been interpreted as freshly grated Parmesan cheese, with chopped parsley listed separately as the garnish. The amount of frying oil, parsley, and dipping sauce is not specified.
