T.G.I. Friday's Jack Daniel's Grill Glaze
A sweet, slightly spicy copycat glaze made with roasted garlic, pineapple juice, teriyaki, brown sugar, lemon, whiskey, and cayenne. Use it on salmon, ribs, steak, chicken, pork chops, or wings, applying it late when grilling so the sugary sauce does not burn.

Ingredients
- 2 tsp garlic (Trimmed as directed; 2 teaspoons roasted garlic are used in the sauce.)
- 1 tbsp olive oil (For drizzling over the garlic before roasting.)
- 0.667 cup water
- 1 cup pineapple juice
- 0.25 cup teriyaki sauce
- 1 tbsp soy sauce
- 1.333 cup dark brown sugar
- 3 tbsp lemon juice
- 3 tbsp white onion (Minced.)
- 1 tbsp Jack Daniel's whiskey
- 1 tbsp crushed pineapple
- 0.25 tsp ground cayenne pepper
Steps
- 1
Preheat the oven to 325°F. Cut approximately 1/2 inch from the top of the garlic head and trim the roots so the head sits flat. Remove the loose papery skin while keeping enough skin around the cloves to hold the head together.
- 2
Place the garlic in a small casserole dish or baking pan. Drizzle the olive oil over it, cover the dish with a lid or foil, and bake for 1 hour. Remove the garlic and let it cool until it can be handled safely.
- 3
In a medium saucepan over medium-high heat, combine the water, pineapple juice, teriyaki sauce, soy sauce, and dark brown sugar. Stir occasionally until the mixture boils.
- 4
Reduce the heat so the mixture is just simmering.
- 5
Squeeze the sides of the cooled garlic head to push out the pasty roasted garlic. Measure 2 teaspoons of the roasted garlic into the saucepan and whisk it into the liquid.
- 6
Add the lemon juice, minced white onion, Jack Daniel's whiskey, crushed pineapple, and ground cayenne pepper to the saucepan. Stir to combine.
- 7
Let the sauce simmer for 40 to 50 minutes, or until it has reduced by approximately half and is thick and syrupy. Keep watch so it does not boil over.
- 8
Let the glaze cool, then transfer it to an airtight container and refrigerate for up to 1 month. Use it to top meat and serve extra on the side.
Notes
The published metadata lists 30 minutes each for preparation and cooking and 1 hour total, while the detailed instructions specify 1 hour to roast the garlic plus 40–50 minutes of simmering. When grilling, apply the glaze late in the cooking process, just before removing the meat from the heat, because its high sugar content can cause it to burn quickly.
