Ingredients

  • 1 cup coconut flour
  • 4 tbsp psyllium husk powder
  • 0.5 cup softened butter, coconut oil, or grass-fed lard (Use butter, coconut oil, or grass-fed lard. The nutritional estimate is based on butter.)
  • 0.25 tsp garlic powder
  • 0.25 tsp cumin
  • 0.5 tsp red chili powder
  • 2 cup hot broth or hot water (Use hot broth or hot water.)
  • butter or coconut oil for greasing (Use lightly to grease the griddle, cast iron skillet, or frying pan.)
  • parchment paper (For rolling and transferring the tortillas.)

Steps

  1. 1

Add the coconut flour, psyllium husk powder, garlic powder, cumin, and red chili powder to a bowl. Mix the dry ingredients well.

  2. 2

Add the softened butter, coconut oil, or grass-fed lard to the bowl and mix thoroughly.

  3. 3

Pour the hot broth or hot water into the bowl. Stir with a spoon until the butter is melted and everything is well incorporated.

  4. 4

Roll the dough into a log shape and cut it into 8 equal parts.

  5. 5

Lightly grease a griddle, cast iron skillet, or frying pan with butter or coconut oil. Heat the pan over medium heat.

  6. 6

Shape each portion of dough into a ball. Place a ball on a sheet of parchment paper and roll it out as evenly and thinly as possible. If necessary, place another piece of parchment paper on top of the dough while rolling. If the dough tears, keep working it together until it is spread evenly.

  7. 7

Place a medium-sized pan lid on top of the rolled dough. Twist the lid and lift it to cut out a round tortilla.

  8. 8

Lift the parchment paper and place the tortilla over your hand, peeling the paper away with your other hand.

  9. 9

Repeat the shaping, rolling, cutting, and transferring process until all the dough is used. Roll the excess dough together and use it to make additional tortillas.

  10. 10

Place a tortilla on the hot griddle. Cook until the bottom begins to brown, then flip it.

  11. 11

Cook the other side until nicely browned. Remove the tortilla from the pan and repeat with the remaining tortillas.

  12. 12

Use the tortillas to make quesadillas, tacos, and other recipes.
