Ingredients

  • 3 eggs
  • 1 tbsp water (For mixing with the eggs.)
  • 4 cup chicken stock
  • 0.25 tsp salt
  • 0.125 tsp white pepper (More to taste.)
  • 0.25 tsp chicken bouillon powder
  • 0.125 tsp turmeric powder (Optional, for color.)
  • 2 green onions (Slice; keep the white and green parts separate. Use whites in the broth and chopped greens as garnish.)
  • 0.5 tsp sesame oil
  • 2 tbsp cornstarch (For the slurry.)
  • 3 tbsp water (For the cornstarch slurry.)

Steps

  1. 1

In a small measuring cup with a spout, beat the eggs with 1 tablespoon of water until combined. Set aside.

  2. 2

In a small bowl, mix the cornstarch and 3 tablespoons of water until smooth to make a slurry; set aside.

  3. 3

Add the chicken stock, salt, white pepper, chicken bouillon powder, optional turmeric, and the white parts of the sliced green onions to a small pot. Bring to a simmer over medium-high heat.

  4. 4

Once the broth is simmering, reduce the heat to medium. Slowly pour in the cornstarch slurry while stirring the broth continuously. Stir until the soup thickens; add more slurry only if needed for your desired consistency.

  5. 5

Reduce the heat to medium-low. Stir the broth very slowly in a circular motion and, at the same time, drizzle in the beaten eggs in a thin stream over about 20โ€“30 seconds. Do not pour in all the eggs at once; a slower pour makes thinner ribbons.

  6. 6

Turn off the heat and mix in the sesame oil. Taste and adjust the seasoning as needed.

  7. 7

Garnish with the chopped green onion tops and serve.

Notes

For a vegetarian version, use vegetable stock instead of chicken stock. Homemade chicken stock may be used. The author suggests adding a dash of MSG for a more restaurant-style flavor. Reheat gently in the microwave or on the stove, stirring occasionally. The body excerpt also gives a tip to keep the heat low after adding cornstarch and turn it off as soon as the eggs are added, but the structured recipe's listed sequence turns off the heat after mixing in sesame oil.
