Ingredients
- 500 g ground meat
- 10 thin wraps
- 3 small sweet peppers
- 3 cherry tomatoes
- 3 cloves of garlic
- 0.5 yellow onion, finely chopped (For the ground meat mixture)
- 0.5 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 0.5 tsp black pepper
- fresh parsley (To taste, finely blended into the ground meat)
- 100 g Tomato Frito (Quantity: 100–150 g)
- 0.5 organic garden-herb stock cube (Crumble it)
- 0.5 yellow onion, sliced (For the baking dish)
- 1 tbsp olive oil (Quantity: 1–2 tbsp; for brushing the top)
- Turkish or Greek yogurt (Cold; a generous layer to serve alongside)
- fresh parsley (For serving)
- chili flakes (For serving)
Steps
- 1
Place the sweet peppers, cherry tomatoes, garlic, fresh parsley, and half a yellow onion in a blender or food processor and blend until finely chopped.
- 2
Place the ground meat in a bowl. Mix in the finely ground vegetable mixture.
- 3
Add the paprika, cumin, salt, and black pepper, and mix into the ground meat.
- 4
Spread a thin layer of the ground meat mixture over each wrap, as if topping a pizza.
- 5
Roll the wraps up tightly and cut each roll into pieces.
- 6
Spread the Tomato Frito over the bottom of a baking dish.
- 7
Crumble the half stock cube over the sauce.
- 8
Distribute the sliced half yellow onion over the sauce.
- 9
Place the wrap pieces upright and next to one another in the baking dish.
- 10
Brush the tops with 1–2 tbsp of olive oil.
- 11
Bake for approximately 30–40 minutes in a fan oven at 200 °C. Keep an eye on the dish; baking time may vary depending on the oven. The wraps are ready when the ground meat is cooked through and the wraps are golden brown and crispy.
- 12
Spread a generous layer of cold Turkish or Greek yogurt over a plate and place the crispy wraps on top.
- 13
Finish with fresh parsley and chili flakes. Serve so that each bite includes some yogurt.
Notes
The creator emphasizes using fresh parsley; in the video, dried parsley was used because there was no fresh parsley at home. The recipe gives a range for the quantities of Tomato Frito and olive oil.
