Steps
- 1
Combine the ground beef, diced onion, diced bell pepper, minced garlic, chopped parsley, 1 tablespoon olive oil, curry powder, beef bouillon, garlic powder, onion powder, black pepper, 2 teaspoons paprika, cumin, and salt to taste. Mix until the mixture is smooth and slightly sticky.

Cover the beef mixture and refrigerate for 20–30 minutes. During this time, soak the wooden skewers in water.
- 3
Spread a thin layer of the chilled beef mixture over lavash bread or a large flour tortilla.

Roll the bread tightly around the beef mixture, then slice the roll into pieces.
- 5
Thread the sliced roll pieces onto the soaked skewers, packing them closely together.

Bake the skewers at 400°F for 20–25 minutes, flipping them halfway through, until the beef is golden and cooked through.
- 7
To make the chili butter, melt the butter and 1 tablespoon olive oil together.
- 8
Stir in the tomato paste, 3 teaspoons paprika, salt to taste, and the optional chili flakes.
- 9
Cook the chili butter for 30 seconds, until it is glossy and fragrant.

Brush the baked skewers generously with the chili butter.

Serve the kebab roll-ups over garlic yogurt or alongside fries. Finish with fresh parsley and a squeeze of lemon.
