Ingredients
- 1100 g waxy potato (peeled, whole or cut in pieces (4 x 4 cm) to fit through feeder tube)
- 15 g extra virgin olive oil
- 150 g diced bacon
- 60 g clarified butter (unsalted)
- 1 tsp sea salt
- 1 tsp ground black pepper
Steps
- 1
Insert the Thermomix® Cutter drive shaft and place the Cutter basket into the mixing bowl.
- 2
Insert the cutting disc with the grating side (side 2) facing up.
- 3
Place the Cutter lid on the mixing bowl and grate the 1100 g of peeled waxy potatoes using the Grating mode (Thick).
- 4
Remove the Cutter and set the grated potatoes aside.
- 5
Place 15 g extra virgin olive oil and 150 g diced bacon in a large non-stick frying pan (approx. 28 cm) and sauté over medium heat until the bacon is crispy.
- 6
Add the grated potatoes, 1 tsp sea salt, and 1 tsp ground black pepper to the pan with the bacon.
- 7
Stir well and sauté for about 5-10 minutes, turning occasionally, until the potatoes begin to soften.
- 8
Press the potato mixture down firmly with a spatula to form a flat cake.
- 9
Add 30 g of clarified butter around the edges of the pan, allowing it to melt and run underneath the potatoes.
- 10
Fry the Rösti over medium heat for about 10-15 minutes until the bottom is golden brown and crispy.
- 11
Place a large plate over the pan and carefully flip the Rösti onto the plate.
- 12
Add the remaining 30 g of clarified butter to the pan, then slide the Rösti back into the pan to brown the other side for another 10 minutes.
- 13
Serve hot, cut into wedges.
Notes
Variations: You can omit the bacon for a vegetarian version. Ensure the potatoes are waxy to help the Rösti hold its shape during flipping.
