  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tbsp minced garlic
  • 10 oz diced tomatoes with green chiles (Drained)
  • 10 oz condensed cheddar soup
  • 1.5 cup Colby Jack cheese (Shredded; stir 1 cup into the cooked potatoes and use the remaining 1/2 cup to top)
  • cilantro (Dried or fresh, for topping)
  • sour cream (Optional favorite taco topping; used by the author)
  • hot sauce (Optional favorite taco topping; used by the author)

Steps

Brown the ground beef in a skillet over medium-high heat. Drain the grease well.

  2. 2

    Quarter the baby potatoes.

Add the quartered potatoes to the crockpot.

  4. 4

Add the browned, drained ground beef, the salt, black pepper, cumin, dried cilantro, garlic powder, onion powder, and chili powder to the crockpot as the taco seasoning mixture.

  5. 5

    Add the minced garlic.

  6. 6

Add the drained diced tomatoes with green chiles and the condensed cheddar soup.

  7. 7

    Stir everything together well.

  8. 8

  11. 11

Serve with favorite taco toppings, such as sour cream and hot sauce.
