- 2 g Salt
- Baking soda (A pinch)
- Fresh basil (A few leaves)
- Water (For boiling the potatoes)
Steps
- 1
Bring a pot of water to a boil and boil the potatoes for approximately 25–30 minutes. They should be tender all the way to the center but not falling apart.
- 2
Arrange the boiled potatoes on a baking tray lined with parchment paper.
- 3
Cover the potatoes with another sheet of parchment paper and flatten them well, using a glass with a rounded base to help you.
- 4
Pour the tomato passata into a small saucepan, add the salt and a pinch of baking soda, then cook over medium heat for approximately 6 minutes.
- 5
Turn off the heat and add a few leaves of fresh basil to the passata.
- 6
Spray the extra-virgin olive oil over the smashed potatoes.
- 7
Spread the tomato passata over the potatoes, then top with the high-protein or light cheese, or the mozzarella.
- 8
Bake in a fan oven at 200 °C for 15–20 minutes, until the cheese is fully melted and the surface looks golden and gratinated.
