Ingredients

  • 300 g Corn (Fresh or thawed corn may be used; drain if necessary.)
  • 17.5 g Wheat flour (The source indicates between 15 and 20 g.)
  • 17.5 g Cornstarch (The source indicates between 15 and 20 g.)
  • 2 g Salt
  • 2 g Ground black pepper
  • 2 g Garlic powder
  • 1 Egg yolk (The source indicates one yolk.)
  • 1 tbsp Water
  • 100 g Mozzarella cheese (Estimated amount, as the source does not specify how much to use. Cut into small cubes for filling the balls.)
  • Vegetable oil (For frying; use enough to cover the balls.)

Steps

  1. 1

If the corn is frozen, thaw it and drain it well. Place the 300 g of corn in a food processor and pulse until you obtain a coarse, uniform mixture without turning it completely into a purée.

  2. 2

Transfer the corn to a bowl. Add the flour, cornstarch, salt, black pepper, garlic powder, egg yolk, and water.

  3. 3

Mix until combined. The mixture should be moist and firm enough to shape into balls; if it is too loose, let it rest for a few minutes so the flour and cornstarch can absorb moisture.

  4. 4

Take a portion of the mixture and flatten it slightly in the palm of your hand. Place a cube of mozzarella in the center and close the mixture around the cheese, making sure it is completely covered.

  5. 5

Roll each portion between your hands to form a compact ball. Repeat with the remaining mixture and mozzarella.

  6. 6

Heat enough vegetable oil in a skillet or deep saucepan to approximately 175 °C. The oil should be hot before adding the balls, but not smoking.

  7. 7

Fry the balls in batches, without overcrowding the pan, until golden brown and crispy on the outside and the cheese in the center is melted, approximately 3-5 minutes per batch.

  8. 8

Remove the balls with a slotted spoon and place them on paper towels to absorb excess oil. Serve hot, while the mozzarella is soft and melted.

Notes

The publication does not provide detailed instructions, the amount of mozzarella, or the amount of oil; these elements were estimated to complete a usable procedure. Adjust the amount of flour and cornstarch within the indicated range according to the moisture of the corn. Make sure each ball is well sealed to prevent the cheese from escaping during frying.
