Ingredients
- 3 lb Chicken thighs (Chopped into 1-inch cubes)
- 0.333 cup Coconut aminos, soy sauce, or tamari (Use one of the listed options)
- 3 tbsp Maple syrup or honey (Use maple syrup or honey)
- 1 tbsp Rice vinegar
- 1 tbsp Fresh ginger (Fresh grated ginger; alternatively use 1 tsp ground ginger)
- 2.5 cloves Garlic (Minced garlic; alternatively use ¾ tsp garlic powder)
- 0.5 tbsp Toasted sesame oil
- Orange juice or lime juice (Optional splash)
- 4 Bell peppers (Chopped into 1-inch pieces)
- 1 Red onion (Chopped into 1-inch pieces)
- 1 Pineapple (Cut into chunks)
- 10 Wooden skewers (Soaked in water for 20–30 minutes)
- Cilantro (Optional garnish)
- Sesame seeds (Optional garnish)
- Chili crisp (Optional garnish)
- Cooking oil (A drizzle, for the griddle or stovetop method)
- Rice (Optional, for serving the bowl version)
Steps
- 1
Soak 10–12 wooden skewers in water for 20–30 minutes.
- 2
In a large bowl, whisk together the coconut aminos, soy sauce, or tamari; maple syrup or honey; rice vinegar; ginger; garlic; toasted sesame oil; and, if using, a splash of orange or lime juice.
- 3
Add the cubed chicken to the marinade and toss thoroughly to coat.
- 4
Cover and marinate the chicken for at least 30 minutes, or up to 24 hours for deeper flavor.
- 5
Thread the marinated chicken, bell peppers, red onion, and pineapple onto the soaked skewers, alternating the ingredients.
- 6
For grilling, heat the grill to medium heat, approximately 400–425°F. Grill the skewers for 12–15 minutes, turning occasionally, until the chicken is fully cooked.
- 7
Alternatively, for a griddle or stovetop method, heat a drizzle of oil over medium heat. Once hot, add the skewers and cook for 10–12 minutes, rotating them until fully cooked.
- 8
Garnish with cilantro, sesame seeds, and/or chili crisp as desired, and serve warm.
- 9
For the bowl version, skip the skewers and serve the cooked teriyaki chicken and vegetables over rice.
Notes
A store-bought teriyaki sauce can be used as a shortcut marinade. For freezing, marinate the chicken and freeze it raw; thaw overnight in the refrigerator before assembling the skewers. The source does not provide a specific rice quantity or detailed cooking instructions for the bowl version.
