Ingredients

  • 2 lb minced chicken (Divide into 10 equal portions; the method specifies placing 2–3 tablespoons on each tortilla.)
  • 10 mini tortillas
  • salt and pepper (To taste; used to season the chicken.)
  • oil for cooking (Use a small amount for the skillet.)
  • 1 cup mayonnaise (For the Caesar dressing.)
  • 2 tsp Dijon mustard (For the Caesar dressing.)
  • salt (To taste; for the Caesar dressing.)
  • 3 tbsp olive oil (For emulsifying the Caesar dressing.)
  • 1 tsp Worcestershire sauce (For the Caesar dressing.)
  • 2 tsp lemon juice (For the Caesar dressing.)
  • 2 cloves garlic (Freshly minced.)
  • 1 tsp black pepper (For the Caesar dressing.)
  • 1 large head romaine lettuce (Diced for the Caesar salad topping.)
  • 0.333 cup Parmesan cheese (Shredded or shaved.)
  • 1 cup croutons (For topping the tacos.)

Steps

  1. 1

Divide the minced chicken into 10 equal portions. Place 2–3 tablespoons of chicken in the center of each mini tortilla and press it down gently into an even layer. Season the chicken with salt and pepper.

  2. 2

Heat a skillet over high heat with a small amount of cooking oil.

  3. 3

Place the tortillas in the skillet with the meat side down. Reduce the heat to medium-low and cook for 2–3 minutes, or until the chicken is cooked through.

  4. 4

Flip the tacos and cook the tortilla side until it is crispy and golden.

  5. 5

While the tacos cook, prepare the Caesar dressing. In a bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, salt, and black pepper.

  6. 6

Slowly pour the olive oil into the dressing mixture while whisking continuously, until the dressing is smooth and emulsified.

  7. 7

Top each cooked taco with diced romaine lettuce, shaved or shredded Parmesan cheese, and croutons.

  8. 8

Drizzle the Caesar dressing over each taco.

  9. 9

Serve the Chicken Caesar Smash Tacos immediately.

Notes

The source gives both 2–3 tablespoons of chicken per tortilla and 2 lb total chicken divided into 10 portions; these quantities are not fully consistent, so use the stated portioning guidance while keeping the chicken layer even. The source does not specify the exact skillet type, oil quantity, or chicken internal temperature. Serve immediately for the best tortilla crispness.
