Ingredients

  • 2 Eggs (separated; yolks kept intact)
  • Italian herbs (to taste)
  • Maggi seasoning (or salt to taste)
  • 1 tbsp Grated cheese (for topping)

Steps

  1. 1

Preheat your oven to 175°C (350°F).

  2. 2

Separate the eggs, placing the whites into a large mixing bowl and keeping each yolk separate and intact in a small cup or bowl.

  3. 3

Whisk the egg whites until they form stiff peaks.

  4. 4

Line a baking sheet with parchment paper. Spoon the whipped egg whites onto the sheet in two mounds to resemble clouds.

  5. 5

Using the back of a spoon, create a small indentation or 'well' in the center of each egg white mound.

  6. 6

Bake the egg white clouds in the preheated oven for 6 minutes.

  7. 7

Carefully remove the baking sheet from the oven and gently slide one egg yolk into each of the indentations.

  8. 8

Return the eggs to the oven and bake for an additional 5 minutes (or longer if you prefer a firmer yolk).

  9. 9

Remove from the oven and season with Maggi (or salt), Italian herbs, and a sprinkle of grated cheese before serving.

Notes

The author notes that if you prefer a harder yolk, you should extend the second baking time. The transcript mentions using three egg whites for two yolks in the video demonstration, but the base recipe is for two eggs.
