Ingredients
- 50 g whole-wheat flour
- 40 g oat flour
- 1 cucchiaino baking powder
- cinnamon (a pinch)
- 15 g brown sugar (The suggested trick is to add it as soon as the pancakes are removed from the pan if using it as a topping.)
- salt (a pinch)
- 1 egg
- 130 g plain yogurt
- 1 cucchiaio oil
- 1 apple (peeled and cut into 0.5 cm dice)
- brown sugar for topping (optional topping; add it as soon as the pancakes come out of the pan. Quantity to taste.)
Steps
- 1
In a bowl, mix the whole-wheat flour, oat flour, baking powder, cinnamon, brown sugar, and a pinch of salt.
- 2
In another bowl, beat the egg with the plain yogurt and oil until combined.
- 3
Pour the wet ingredients into the bowl with the dry ingredients and mix only until just combined.
- 4
Add the peeled apple, cut into approximately 0.5 cm dice, and fold it into the batter.
- 5
Heat a pan over medium heat and keep it covered during cooking. Pour approximately 2 tbsp of batter per pancake; the author indicates that they used a pan with molds.
- 6
Cook each pancake for 2 and a half minutes per side, always over medium heat and with the lid on.
- 7
Serve the pancakes with your favorite topping. If using brown sugar, add it as soon as the pancakes are removed from the pan, while they are still hot and moist, so it adheres well.
Notes
The amount of sugar listed among the ingredients is for the batter; the post also suggests serving the pancakes with brown sugar, without specifying an additional quantity. Other toppings of your choice are also suggested.
