Weights are estimates. Together, the ingredients weigh about 665 g before cooking, which is about 165 g per serving.
Steps
Cook the potatoes until very tender. Drain, mash well, and allow the excess steam to escape.
Mix the oat flour into the mashed potato until you have a soft dough that is easy to shape. If desired, add the grated Parmesan for extra flavor.
Take a portion of the dough and flatten it in your hand. Place a small cube of mozzarella in the center and seal the dough well around the filling.
Shape the bites and refrigerate them for 10 minutes so they become firmer.
If desired, brush the bites with beaten egg. Finish with oregano and salt to taste.
Preheat the Air Fryer to 180 °C (350 °F). Place the bites in the basket and cook for about 8 to 12 minutes; check after 8 minutes and remove when lightly golden.
Notes
The grated Parmesan is an optional suggestion. The estimated preparation time includes cooking the potatoes; the total time includes the 10 minutes of refrigeration. The recipe does not specify how many bites it yields.
