Ingredients
- 1 Butternut squash (Halved, deseeded, and flesh scored)
- 1 Shallot (Peeled and roughly chopped)
- 1 Garlic clove (Peeled)
- 100 g Smoked bacon lardons
- 200 ml Crème fraîche
- 400 g Fresh gnocchi
- Olive oil (A drizzle)
- 1 tsp Paprika
- Salt (Add to taste)
- Pepper (Add to taste)
- 40 g Grated cheese (For finishing)
Steps
- 1
Preheat the oven to 200 °C. Halve the butternut squash and remove the seeds from the center.
- 2
Peel and roughly chop the shallot. Also peel the garlic clove.
- 3
Score the flesh of both butternut squash halves with a knife, without piercing the skin.
- 4
Place the shallot and garlic clove in the cavities of the butternut squash halves. Add a drizzle of olive oil, salt, and the paprika.
- 5
Roast for 30 minutes at 200 °C, until the butternut squash is well roasted and the flesh is tender.
- 6
Meanwhile, heat a frying pan without any added fat. Add the smoked bacon lardons and fry until well browned and crispy.
- 7
When the butternut squash is roasted, scoop out the flesh and remove the shallot and garlic, then blend them with the crème fraîche until smooth and creamy.
- 8
Set aside the crispy lardons once cooked.
- 9
Bring a saucepan of water to a boil, then cook the fresh gnocchi in it. Reserve a ladleful of the cooking water before draining.
- 10
Pour the butternut squash sauce into the pan used for the lardons. Scrape the bottom of the pan to loosen the caramelized browned bits.
- 11
Add a ladleful of the gnocchi cooking water to loosen the sauce and stir.
- 12
Add the drained gnocchi to the pan and mix well to coat them with the sauce.
- 13
Add the grated cheese and stir to incorporate.
- 14
Divide the gnocchi among plates and top with the crispy lardons. Serve immediately.
Notes
The transcript does not specify the cooking time for the gnocchi in boiling water; follow the package instructions. The amount of oil is indicated as a drizzle, and the salt and pepper should be adjusted to taste.
