Ingredients
- 1000 g Chicken wings
- 160 g Cornflour (Divided: 100 g for coating the wings and 60 g for the batter)
- 30 g Plain flour
- 0.5 tsp Salt (Used in the batter)
- 150 ml Ice-cold water (For the batter)
- 60 g Butter
- 120 g Chipotle hot sauce (The source specifies Bull’s-Eye Louisiana Chipotle With Cajun Spices Hot Sauce)
- 1 Lime (Juiced)
- 3 tbsp Honey
- 15 g Fresh chives (Finely chopped, for serving)
- Vegetable oil (For deep-frying)
Steps
- 1
Coat the chicken wings in 100 g of the cornflour, then set them aside.
- 2
In a separate bowl, combine the remaining 60 g cornflour with the plain flour and ½ teaspoon salt. Add 150 ml ice-cold water and whisk until the batter is smooth.
- 3
In a small saucepan, combine the butter, chipotle hot sauce, lime juice, and honey.
- 4
Heat the sauce mixture and bring it to a bubble. Cook for 5 minutes.
- 5
Heat a large pot of vegetable oil for frying the wings.
- 6
Dip the wings in the batter, then transfer them directly to the frying oil.
- 7
Deep-fry the wings over medium-high heat for 5–6 minutes, until lightly golden and very crispy.
- 8
Toss the fried wings in the sauce.
- 9
Serve the wings with the finely chopped fresh chives.
Notes
The source does not specify the frying-oil quantity or a measured frying temperature. Use enough oil to deep-fry the wings safely in the large pot.
