Ingredients

  • 1 cup unsalted butter (melted and cooled slightly)
  • 3 tbsp neutral oil (such as avocado oil or canola oil)
  • 1 cup light brown sugar
  • 0.333 cup granulated sugar
  • 2 eggs (room temperature)
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp espresso powder
  • 1 tbsp vanilla bean paste
  • 1.5 cups semi-sweet chopped chocolate or chocolate chips (use chopped chocolate or chocolate chips)
  • 0.75 cup chocolate hazelnut spread
  • vanilla ice cream (for serving, 1 scoop per serving suggested)

Steps

  1. 1

Preheat the oven to 350°F (175°C). Grease the sides of an 8-inch springform or removable-bottom cake pan and line the bottom with parchment paper so the cookie pie can be lifted out cleanly.

  2. 2

In a mixing bowl, add the melted, slightly cooled butter and crack in the room-temperature eggs. Whisk for 1–2 minutes, until well combined.

  3. 3

Add the light brown sugar and mix for about 2–3 minutes, until the mixture forms a paste.

  4. 4

Add the granulated sugar, neutral oil, and vanilla bean paste. Mix until everything is well combined.

  5. 5

In a separate bowl, combine the all-purpose flour, baking soda, espresso powder, and salt.

  6. 6

Gradually add the dry mixture to the wet mixture, mixing only until just combined and a dough begins to come together.

  7. 7

Add the chopped chocolate or chocolate chips and mix only until just incorporated. Do not overmix the dough.

  8. 8

Press half of the cookie dough evenly into the bottom of the prepared pan.

  9. 9

Spread the chocolate hazelnut spread over the cookie dough, leaving a 1/2-inch border around the edge.

  10. 10

Gently press the remaining cookie dough over the hazelnut spread to cover it, then smooth the top slightly.

  11. 11

Bake for 30–35 minutes, until golden brown and mostly set in the center.

  12. 12

Remove the pie from the oven. The center may still be slightly jiggly; it will set completely as it cools.

  13. 13

Let the cookie pie cool for about 2–3 hours before cutting.

  14. 14

Cut into portions and serve with a scoop of vanilla ice cream.

Notes

The source does not specify whether the pie should be served warm or at room temperature beyond the required 2–3 hour cooling period. The center may remain slightly jiggly when removed from the oven and will set as it cools.
