- 3 Garlic cloves
- 1 tbsp Tomato paste
- Salt (To taste)
- Black pepper (To taste)
- Chili (To taste)
- Sweet paprika (To taste)
- Oregano (To taste)
- Vegeta seasoning (To taste)
- Grated mozzarella (Use in and on the quesadillas; amount not specified)
- Butter (For frying; amount not specified)
- Crème fraîche with herbs (For dipping; amount not specified)
- Salad (Optional accompaniment)
- Pickles (Optional accompaniment)
- Chilies (Optional accompaniment)
Steps
- 1
Finely chop the two onions and the three garlic cloves.
- 2
Heat a little butter in a frying pan and sauté the chopped onions until softened.
- 3
Add the garlic and ground beef to the pan. Cook, breaking up the meat, until the beef is cooked through.
- 4
Stir in the tomato paste, then season with salt, black pepper, chili, sweet paprika, oregano, and Vegeta. Cook until the filling is well combined and ready.
- 5
Heat a little more butter in a pan suitable for frying the quesadillas.
- 6
Place one tortilla in the pan. Cover one half with grated mozzarella, then add some of the beef filling.
- 7
Add more grated mozzarella over the beef filling, then fold the tortilla over to close the quesadilla.
- 8
Cook the folded quesadilla in the butter until the tortilla is browned and crisp and the cheese has melted. Turn or repeat as needed to cook the other side.
- 9
Repeat with the remaining tortillas, beef filling, and cheese.
- 10
Cut the quesadillas in half and serve with crème fraîche mixed with herbs for dipping. A fresh salad, pickles, or chilies can also be served alongside.
