Ingredients

  • 1 head cabbage (Cut into thick slices, then halve each slice)
  • 4 carrots (Medium, diced)
  • 1.5 cup fresh mushrooms (Sliced)
  • 5 Mexican green onions (Diced)
  • 1 bulb garlic (Diced)
  • 2 tbsp extra-virgin olive oil (Divided, or to taste; 2 teaspoons are used to cook the burger patties and the remainder is used for the vegetables)
  • 6 grilled vegetarian burger patties (Use grilled patties; dice after heating)
  • 1 tbsp reduced-sodium soy sauce
  • 2 tsp sesame oil

Steps

  1. 1

Cut the cabbage into thick slices, then cut each slice in half. Place the cabbage, diced carrots, sliced mushrooms, diced green onions, and diced garlic in a large container and combine.

  2. 2

Heat 2 teaspoons of the olive oil in a large skillet over medium heat.

  3. 3

Add the grilled vegetarian burger patties to the skillet. Cook, turning occasionally, until heated through, 8 to 10 minutes.

  4. 4

Remove the patties from the heat and dice them.

  5. 5

Heat the remaining olive oil in a large skillet or wok until it shimmers.

  6. 6

Add the cabbage mixture to the skillet or wok. Cook and stir over medium-high heat until the cabbage begins to take on a transparent look, 7 to 8 minutes.

  7. 7

Stir the diced burger pieces into the cabbage mixture.

  8. 8

Continue cooking until the flavors combine, 7 to 8 minutes more.

  9. 9

Stir in the reduced-sodium soy sauce and sesame oil.

  10. 10

Reduce the heat and continue cooking, turning occasionally, until the carrots are tender, 3 to 5 minutes.

Notes

The author suggests serving the stir-fry over brown rice to make it more filling; white rice or couscous may also be used. Baby carrots can replace the diced carrots, regular green onions can replace Mexican green onions, and additional spices may be added after the veggie meat. The source does not specify the amount of cooking oil beyond the 2 tablespoons listed or provide a precise patty size or brand, so nutrition estimates for the patties are approximate.
