Ingredients
- 250 g Wheat flour (sift)
- 1 tsp Dry yeast
- 0.5 tsp Sugar
- 1 tsp Salt
- 1 tsp Vegetable oil (lightly oil the dough before resting; additional quantity for greasing is not specified)
- 135 ml Warm water (for the dough)
- 2 tbsp Honey or pekmez (for the honey water)
- 120 ml Warm water (mix with the honey or pekmez)
- 70 g Sesame seeds (toast in a dry skillet until golden)
Steps
- 1
Dissolve the sugar and dry yeast in 135 ml of warm water.
- 2
Add the vegetable oil and salt. Sift the flour into the bowl with the liquid mixture.
- 3
Knead the dough thoroughly for approximately 3–4 minutes.
- 4
Divide the dough into 4 equal portions and shape them into small logs.
- 5
Lightly oil the dough, cover with plastic wrap, and leave to rest for 30 minutes.
- 6
Meanwhile, toast the sesame seeds in a dry skillet until golden. Transfer them to a dish and leave to cool.
- 7
Mix the honey or pekmez with 120 ml of warm water.
- 8
Roll each portion of dough into a long rope approximately 50–60 cm long.
- 9
Fold the rope in half and twist it. Press the braid slightly along its entire length so it does not unravel.
- 10
Shape the dough into a ring and pinch the edges together firmly.
- 11
Dip each bagel in the honey water on both sides.
- 12
Coat the bagel in sesame seeds and place it on parchment paper.
- 13
Cover the simit with a towel or plastic wrap and leave to rest for 15 minutes.
- 14
Stretch the simit to increase its diameter, then leave it for another 5–10 minutes.
- 15
Preheat the oven to 180 °C. Place a baking tray with water in the oven.
- 16
Bake the simit for 25–35 minutes.
- 17
If desired, slice the finished simit in half and add any filling.
Notes
The source does not specify exactly where to place the tray with water or how much water to add. Simit is traditionally served with processed cheese, vegetables, honey, or without a filling.
